Where the sensors go
Put the next sensor near the door; it can show recorded-air changes there sooner than a sensor near the middle shelf.
Use one near the door and one in the crisper to monitor those areas separately. Actual timing and differences vary by appliance and placement.
Four covers a second appliance next to the first, or fills out every zone of a big side-by-side — door, crisper, both compartments, and one spare for the spot you think about most.
Placements are suggestions — the app walks you through them for your exact fridge layout, and you can always override.

Questions
Do I need another gateway?
Not if the new sensors live within Bluetooth range of one you have — the same room, give or take a wall. A garage or basement appliance usually wants its own gateway.
How does the app know where I put them?
You tell it once — scan the setup sticker, pick the spot from your fridge's layout — and from then on alerts name shelves ("crisper drawer"), not sensor IDs.
